What You Need to Prepare a Spanish Tortilla:
- 2 large Potatoes
- 2 large Onions
- 8 Eggs
- Olive Oil
- Salt
Instructions:
- Peel and dice the potatoes. Chop the onions into small pieces.
- Put a few tablespoons of olive oil into a wide pan. Fry the potato and onion cubes in the olive oil over low to medium heat for about 10 minutes until the potatoes are soft. Let the onion and potato cool for a few minutes.
- In a bowl, beat the eggs and salt until well combined. Stir in the cooled potatoes and onions.
- Heat a couple of tablespoons of olive oil in the same pan. Pour the egg-potato-onion mixture into the pan. Cook the tortilla over medium to low heat, until the edges become golden and the center is slightly firm. Loosen the edges with a spatula as you cook.
- When the egg is set, carefully place a plate on top of the pan and carefully flip the pan and plate in one motion, so that the tortilla will be on the plate. Slide the tortilla back into the pan and cook on the other side until lightly golden brown.
- Increase the heat and cook for a few minutes until the center is set and the bottom is browned a bit. Slide the tortilla on to a plate and let cool for 10 minutes before serving.

What You Need to Prepare Masala-Ofen-Fish:
- 4 Fish Fillets, such as sea bass
- ½ teaspoon Ground Cumin
- ½ teaspoon Ground Cinnamon
- 1 teaspoon Turmeric
- 2 cloves Garlic
- Fresh Ginger, grated (about a thumb-sized piece)
- 2 Green Chillies, finely chopped
- 2 tablespoons Olive Oil
- Juice of half a lemon
- Handful of fresh Coriander, finely chopped
- Salt and freshly ground pepper, to taste
Instructions:
- Preheat oven to 200 C/400 F degrees.
- In a large bowl, mix together the cumin, cinnamon, turmeric, garlic, ginger, chilli, olive oil, lemon juice and fresh coriander. Add salt and pepper to taste.
- Rub the spice mixture all over the fish fillets. Place the seasoned fish on a roasting tray and cook in the oven for 18-20 minutes. Serve with fluffy basmati rice and a side salad.
